Ingredients

  • 1 ripe avocado, sliced

  • 100g fresh spinach leaves

  • 100g blueberries

  • 1 fillet of salmon (approx. 150g), pan-seared or baked

  • A handful of walnuts, roughly chopped

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and pepper to taste

Method

  1. Cook the salmon. Season the fillet with salt and pepper, then pan-sear it in a little olive oil for around 4 minutes on each side (or bake at 200°C for 12–15 minutes) until cooked through and flaky.

  2. Build the base. While the salmon cooks, arrange the spinach leaves on a plate or in a bowl as your salad base.

  3. Add the toppings. Scatter over the blueberries, sliced avocado, and chopped walnuts.

  4. Add the salmon. Once cooked, flake or place the salmon on top of the salad.

  5. Dress it. Whisk together the olive oil and lemon juice, then drizzle over the top. Season with a little extra salt and pepper if needed.

  6. Serve and enjoy. This salad is delicious on its own or paired with a slice of wholegrain bread.
